Morphy Richards Slow Cooker Curry Beef Stew

To celebrate the newest addition to my kitchen accessories, the Morphy Richards Slow Cooker i will embark on a series of crockpot recipes from the easy cooking for men slow cooker cookbook. AS with all slow cookers the best meals are those that have plenty of flavours so my first in this series will be a curry beef stew.

Curry Beef Crockpot - Slow Cooker Cookbook.



Ingredients:
500 grams diced beef
2 tablespoons of minced garlic
1 tablespoon curry powder
1 can diced tomatoes
1 cup beef stock
olive oil
salt and pepper to taste
1 teaspoon chopped fresh ginger
1 finely diced jalapeno chili pepper
1 roughly chopped onion
1 cup rice

Directions:
Turn on the crock pot to its lowest temperature setting, you will need it in about 5 minutes.

The first part of this Curry Beef is cooked in a large pan over medium heat. Pour a table spoon of olive oil in the pan, add beef and stir until browned on all sides.

Remove beef from pan, it is important to keep all juices as this will help to cook the meat in the slow cooker.

Add the garlic, ginger, and jalapeno in the pan and cook for a few minutes. Continually stir  until tender, do not allow the ingredients to stay still in the pan and burn. Add curry powder. Mix in the diced tomatoes and juice from the beef. Remove the pan from the heat.

Add the onion and browned beef in to your Morphy Richards Slow Cooker, if your lucky enough to have one.  Pour the pan mixture on top of the onions and beef into the slowcooker. Add the beef stock.
Cover the slowcooker with the lid and leave it to cook for between 6 to 8 hours stirring occasionally.
Serve in bowls on a bed of rice.

Variation:
Serve with a side of naan bread and or papadums.

If you don't have a slow cooker, thats OK. You can use a large pot with a lid cooked on a very low heat for a few hours. Remember to stir every few minutes as the heat from the stove will burn the meat. Thats why i bought my Morphy Richards Slow Cooker, so i don't burn my meals when i want to infuse the flavours by cooking for many hours.

Poached Chicken & Asparagus

Yet another easy meal for you guys. This Poached Chicken and Asparagus is a classic easy cooking for men meal, and  is a dinner designed to impress that special someone. Best served with a light and dry white white.



Ingredients:
3 Italian parsley stems
1 tablespoon black peppercorns
2 spring onions or ½ an onion finely chopped
1 tablespoon salt
4 skinless chicken breast fillets (200g ea)
8 kipfler potatoes
12 fresh asparagus spears
1 head of witlof (Belgian endive)

Dressing:
1 tablespoon finely chopped fresh chives
3 tablespoons extra virgin olive oil
2 tablespoons lemon juice
Pinch sea salt
Freshly ground black pepper

Method:
Put the parsley, pettercorns, spring onion and salt into a large saucepan filled with cold water and bring to the boil. Add the chicken breasts, turn off the heat, put the lid on and leave the chicken to poach for 2 hours.

Bring a large saucepan of water to the boil and cook the popaties for 15 minutes, or until tender. Drain and peel. Cut in slives and toss two-thirds the dressing through. Keep warm. Blanch the asparagus in boiling water for 3 minutes, then refresh in cold water.

To make the dressing, stir the chives, oil, lemon juice and salt & pepper in a bowl.

Slice the chicken breasts on the diagonal. Divide the witlof leaves, potato & asparagus equally on serving plates, top with slices of chicken & drizzle some dressing over the top.

Hamburger Patty Recipe - Easy Cooking

Another easy cooking recipe for the barbecue is this hamburger patty recipe. Like most guys i love to grab a beer and cook outside on the barbecue, and just start frying. There is no more easy method of cooking for guys than to crank up the barbecue, and who doesn't love that smoky flavour in your hamburger patties. This recipe uses half lamb with half beef, but you can just as easy use all beef.



Ingredients:
  • 250 grams beef mince - For best results make sure the lamb and beef are as fat free as possible, too fatty and you will lose flavour and burn the outside of the patties. You also risk a flare up on the barbecue.
  • 250 grams lamb mince
  • 1 medium sized carrot
  • 2 brown onions
  • 2 beef stock cubes
  • 2 tablespoons barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tea spoon mince garlic
  • 2 eggs
  • mixed herbs
  • 2 tablespoons butter

Method:
  • Finely dice one of the onions and grate the carrot.
  • Beat the eggs, and crumble the stock cubes.
  • Mix all the ingredients (except the second onion and butter) together thoroughly.
  • Halve the second onion and slice, this will be used as a topping in the bun later.
  • You can either roll handfulls of the mixture into patties and use and egg ring  or a hamburger patty maker if you are really fussy about presentation.
  • Note, if the hamburger patty mixture is too sloppy you can always add a little plain flour to help.
  • Get the barbecue plate hot. Drizzle a little oil and fry until cooked through, check regularly so that they don't get burnt on one side. Many barbecues have hot spots so make sure you move the patties around a little so they all cook evenly.
  • Place the sliced onion rings on the barbecue and drop the 2 tablespoons of butter on the top. Flip regularly to avoid burning the onions. Allow the butter to coat through the onions, this will create a caramelised effect and stop the onions from drying out.

Serving:
Note I didn't include the serving ingredients in the above as this is strictly a hamburger patty recipe, but i guess hamburger patties by themselves aren't much fun.

Bun selection is important and varies from person to person. I like a large soft bun with seseame seeds, OK stop laughing now.

Spread a relish (i like tomato) over the bottom half of the bun, and mayonaise over the top half.
Place the hamburger patty on the bottom bun, and top with a few of the caramelised onion rings. If you like sauce add it now, mustard, berbecue or ketchup are all good. Add sliced tomato, salt and pepper, jalapenos, avacado, maybe some cheese, and finally lettuce.

Close the hamburger with the top half of the bun, serve with a side of chips. You guys can grab another beer for a job well done, and chow down on the tastiest hamburger patty recipe you likely to eat today.

Variations:
Fry a few eggs and rashers of bacon for a hamburger with the lot.

Easy Cooking Thai Fish Cakes Recipe

Another favourite of easy cooking for men this Thai Fish Cakes Recipe is simple to cook and quick and easy to prepare.




Ingredients:
  • A few of your favourite fillets of white fish
  • 1 free range egg
  • 3 tablespoons of cornflour
  • 1 tablespoon of fish sauce
  • 3 teaspoons of red curry paste
  • handful of fresh corriander leaves
  • 2 thai chillis
  • handful of green beans
  • handful of spring onions
  • Peanut oil
  • Sweet chilli sauce
Method:
  • Place the fish into a food processor and mix into a mash
  • Beat the egg and add into the food processor with the cornflour, fish sauce, curry paste, chilli, and corriander. Mix in the food processor until well combined.
  •  Remove the mixture from the food processor and place into a bowl. Slice the beans and spring onions and add into the fish cake mixture, mix well.
  • Scoop a dollop of fish cake mixture into an egg ring. Tip, wet a spoon or eg slice to press the fish cake mixture well into the egg slice. Oil the inside of the egg slice.
  • Heat the peanut oil in a large heavy base frying pan. Pour in only enough oil to cover the base of the fry pan. This is a shallow fry recipe.
  • Fry the Thai Fish Cakes and flip when golden brown. Once both sides are cooked to a golden brown, remove from the pan and drain the Thai Fish Cakes on paper towels. Place on a tray in a low heat oven while cooking the other fish cakes.
  • Serve on a bed of rice and a dollop of sweet chilli sauce on top and some asian greens on the side.

Variation:
Substitute the rice and mix up your Thai Fish Cakes Recipe by serving on a bed of mashed potato mixed with mixed herbs, cream, and butter.

Easy Cooking Stuffed Mushrooms with Sausage

This easy cooking for men Stuffed Mushrooms with Sausage recipe is another favourite of mine and is very easy to prepare and make. Stuffed full of vegetables its great for the kids and if you remove the sausage its a great vegetarian meal full of protein.




Ingredients:
  • Large mushrooms (usually about 2 per person)
  • Sausage (your favourite sausage - i usually use a Spanish Chorizo, but you could use Italian Sausage, Peperoni, Proscuito, any other spiced meats, or if not readily available you can even use bacon).
  • Green Capsicum
  • Brown Onion
  • Soft cheese (I use Bocancini because i usually have it available and use it regularly in my Easy Cooking Bruschetta Recipe)
  • Grated mozzarella or pizza cheese
  • Lemon
  • Potato
  • Salsa mix (premade dip is easy)
  • Mixed herbs
  • Salt and pepper to taste (optional)
  • Sour creame or Guacamole (or both)

Method:
  • Peel and boil the potatoes.
  • Diced the sausage and onion and fry in a medium heat pan. Cut the lemon and squeeze over the pan once cooked.
  • Dice the Capsicum.
  • Snap the stems off the mushrooms. Add a tea spoon of Salsa to the inside base of the mushrooms. Dice the stems of the mushrooms.
  • Once the potato is cooked, put the potato, sausage and onion, bocancini, capsicum, mushroom stems, and mixed herbs into a bowl and mix together.
  • Place the mushroom caps onto an oven tray. Scoop the mixture into the mushroom caps. Sprinkle the mushrooms with grated cheese.
  • Put the Stuffed Mushrooms with Sausage into a preheated oven (preheated to 180 degrees celcius) and cook until the grated cheese is melted.
  • Grind with salt and pepper to taste (note i usually don't but i notice that most people do)
  • Serve with a dolop of sour creame or a Guacomole.

Variation:
As always a little spice can have a big impact, and this Stuffed Mushrooms with Sausage recipe is no exception. I will use either or two variations of this recipe.
#1. Sprinkle with dried chilli flakes after removing the Stuffed Mushrooms with Sausage from the oven.
#2. Add a small amount of curry powder into the stuffed mixture prior to mixing and putting into the mushroom caps.

This Stuffed Mushrooms with Sausage recipe is versatile enough to be used as either a main meal, side dish or entree.

Easy Cooking Omlette Recipe

Here is another egg based easy cooking for men recipe that an self respecting man should be able to whip together for an impromptu brunch or a breakfast for that special someone, its an omlette recipe. Use your imagination for ingredients on this recipe, you can almost think of an omlette like a pizza (make that vegetarian pizza).




Ingredients:
  • 2 free-range eggs
  • Salt & pepper, to taste
  • 1 scoop of butter
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • Soft cheese of your choice (use anywhere from Camembert to my favourite Boccancinni)
  • 1 teaspoon Minced garlic
  • Fresh mushrooms
  • Capsicum
  • Spring onion
  • Chorizo sausage (optional)
  • Tabasco sauce (if you like a bit of a kick)

Method:
  • The eggs must be free-range. When ever eggs are the main ingredient don't even think about battery hen eggs. The flavour in free-range is so much better.
  • Use a large pan with a heavy base that can be placed in the oven.
  • Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
  • Omelette's cook quickly so you should prepare the ingredients first.
  • Slice the vegetables into the desired size. I prefer cut smaller for a breakfast / brunch type meal. Slice the cheese into thin(ish) slices.
  • Crack the eggs and add the garlic and beat the eggs lightly. It is important to use an egg whisk when beating as you want to get a lot of air into the mixture. Whisk until light and frothy.
  • Turn on the stove and start to heat the pan. Scoop in the butter.
  • Wait for the butter to melt, and the pan is hot and the butter sizzling.
  • Pour in the egg, cook until the base starts to set, less than 30 seconds, and then sprinkle the vegetables on top (except the parsley). Not the top should still be runny. Cook for another 30 seconds and remove from the heat.
  • Add the sliced cheese on top and place the pan into the oven.
  • Cook until the cheese starts to brown, remove pan from from the oven, remove omlette from the pan and place onto a plate, grind rock salt and pepper over the top, sprinkle the parsley on top, and serve with a fresh glass of orange juice immediately.

Variation:
  • Add chorizo or Italian sausage onto the omlette at the same time as the vegetables
  • Serve with a splash of Tabasco sauce for an extra kick.

Easy Cooking Stuffed Chicken Breast Recipe

This easy-cooking-for-men stuffed chicken breast recipe can be used as a main meal served with salad or vegetable, or the rolled chicken breast can be cooled and sliced to serve as finger food.




Ingredients:
  • 2 chicken breast
  • 12 prawns
  • 4 slices proscuitto (thick cut)
  • minced garlic
  • 2 slices white bread
  • 1 large egg
  • mixed herbs
  • 1 lemon

Method:
  • Make a stuffing by placing the bread, cracked egg, prawns, garlic, and mixed herbs into a food processor. Blend well.
  • Slice (butterfly) the thawed chicken breasts to double their size when spread out.
  • Use a rolling pin or mallet to compress the chicken and spread it out further. Be careful not to “bash” holes in the meat. Lay both the chicken breast together and place the stuffing mix on top.
  • Roll the chicken breast around the stuffing.
  • Roll the proscuitto around the outside of the stuffed chicken breast to help keep it together.
  • Place into a medium heat oven for 1 ½ hours. Be careful not to let the chicken dry out, monitor carefully.

Note: Do not add extra salt, the proscuitto is already very salty from its curing process.

Variation:
# 1 - Add you favoutite soft cheese such as a camembert or boccancinni into the stuffing, best when served warm.
# 2 - If the meat has dried out too much in the oven a creamy garlic and onion sauce will help when drizzled over the top of the sliced pieces.

Serve the stuffed chicken breast warm with a squeeze of lemon juice over the top, or leave to cool and slice (10mm or ½ inch) for nibble food.

Easy Cooking Scrambled Egg Recipe

This easy-cooking-for-men scrambled eggs recipe is not only delicious, cheap, and full of protein but if there is just one recipe that any self respecting man should know, it must be this scrambled eggs recipe. If you can't cook this one, i suggest you give up on you culinary exploits, and marry the first girl you can find who knows her way around the kitchen, or learn how to turn on the microwave oven and live on TV dinners and take out from now on.



Ingredients:
  • free-range eggs (free range eggs will provide better flavour)
  • 3 tablespoons butter
  • ¼ cup milk
  • ¼ cup cream
  • 4 thick slices buttered toast
  • Mixed herbs
  • salt and pepper to taste
  • tobasco sauce to taste (optional)

Method:
  • Crack the eggs into a medium mixing bowl.
  • Add milk and cream. Do not use too much milk or cream (measure carefully). Too much milk and cream will cause the egg to weep moisture.
  • Use a fork to whisk the egg mixture lightly until the ingredients are just combined. The eggs should be mixed through evenly to ensure a consistent yellow without streaks of egg white.
  • Use a large pan with a heavy base on a low heat, do not cook on heat that is too high, as this will cause the eggs to stick to the pan and become flaky and dry.
  • Heat the butter for approx 1 minute or until the butter begins to foam. Swirl the pan to lightly coat its entire base with the butter.
  • The cooking method although simple is very important to get the right consistency with scrambled eggs. Add the egg mixture to the frying pan, using a wide spatula or egg flip gently push the egg mixture and scrape the spatula along the base of the pan, from one side of the pan to the other. Soft folds of cooked egg will begin to develop.
  • Repeat the pushing action with the spoon every few seconds. Make sure all the egg is circulated including around the pan edge to prevent the egg mixture sticking and become dry. Do not try to stir the eggs as this will make them break up into small clumps. (Don't worry if you don't master this technique first time out, your scrambled eggs recipe will still taste great, they just won't look like a professional chef has cooked them).
  • Cook until about three-quarters of the mixture is cooked, then remove the pan from the heat and use the spatula to gently fold the egg mixture a few time more more. The residual heat in the pan will finish cooking the eggs.
  • Serve the eggs on the toast and serve immediately. Thick homemade toast is best.
  • Serve with fresh cracked salt and / or pepper.

Variation:
For a scrambled eggs recipe with a bit of zing, add a splash or 2 or tobasco sauce.

Scrambled Eggs on Toast

Easy Cooking Pizza Dough Recipe

This easy-cooking-for-men Pizza dough recipe is for the dough only. There are many different and tasty toppings that can be applied to this dough. Use your imagination and enjoy. This pizza recipe will make 1 large thick base pizza, or 2 medium sized, thin based pizzas.




Ingredients:
  • 2 cups plain flour
  • 8g sachet of dried yeast
  • 1 teaspoon castor sugar
  • ½ teaspoon salt
  • 2 tablespoons olive oil
  • ¾ cup of warm water
  • 1 tablespoon mixed herbs (optional)
  • 1 teaspoon minced garlic (optional)

Method:
  • Combine dry ingredients into a large mixing bowl and mix well.
  • Add oil and water and mix thoroughly into a dough.
  • Knead on a clean floured surface until the pizza dough is soft. Add flour to the surface to stop sticking as you go.
  • Return the pizza dough to the mixing bowl and cover with a damp tea towel for 30 minutes. The dough is ready when it has doubled in size.
  • Slam the pizza dough down onto the floured surface and knead gently for about 1 minute to press out any air bubbles.
  • Roll the pizza dough recipe out to desired size and add you favoutite toppings.

Variation:
A plain pizza recipe or topping can be brough to life with a simple variation of the pizza dough recipe, add mixed herbs to the dough and / or warm the pizza base sauce with minced garlic before applying.

Easy Cooking Lamb Kebab Recipe

Another favourite with the kids and dad gets to use the barbecue with this quick and easy-cooking-for-men Lamb Kebab recipe.




Ingredients:
  • Lamb mince
  • Pistacio nuts
  • 1 small brown onion (optional)
  • Tomatoes
  • Lettuce
  • Salsa
  • Yoghurt
  • Jalapeno chillis
  • 1 teaspoon cumin seeds
  • 1 teaspoon cardamom seed
  • 1 teaspoon caraway seeds
  • Tortillas

Method:
  • Shell the pistacio nuts and finely chop in a food processor.
  • Put the cumin, cardamom, and caraway seeds into a small pot and roast on a high heat for 1 minute. Grind the roasted seeds in a mortar and add to the food processor.
  • Add the mince to the food processor and combine well.
  • Remove the mince and roll into sausages.
  • Cook the lamb kebab sausages on the barbeque.
  • Place the lamb kebab sausage in a tortilla and top with your selection of sliced tomato, jalapeno, salsa, lettuce, cheese, and yoghurt.

Variation:
# 1 - Slice the onion and cook on the barbecue. Place in tortilla with Lamb Kebab sausage.
# 2 - Experiment with different bread or turn this Lamb Kebab recipe into hamburgers by reshaping the sausage into patties.

Easy Cooking Chicken Noodle Soup Recipe

This easy-cooking-for-men Chicken Noodle Soup recipe is one of those comfort meals that warms your body in the winter. It's everyones favourite, and a great way to get the kids to eat vegetables. This recipe is one that i can easily prepare in the morning before work in my morphy richards slow cooker, i find that the longer the chicken is cooked the more tender and more full of flavour. In fact this recipe is part of my slow cooker cookbook series.





Ingredients:
  • 2 chicken breasts, finely diced
  • 1 litre chicken stock
  • 1 litre vegetable stock
  • 1 table spoon crushed garlic
  • 1 brown onion, diced
  • 2 medium sized carrots, finely diced
  • 2 stalks of celery finely diced
  • 1 parsnip finely diced
  • 1 turnip finely diced
  • 3 medium sized potatoes, diced
  • 1 packet white egg noodles
  • Your choice of dried mixed herbs
  • Salt and pepper to taste
  • Dried chilli flakes (optional)


Method:
  • Make up equal portions of chicken and vegetable stock.
  • Bring the mixed stock to a boil in a large cooking pot.
  • Finely dice the chicken breasts and place in the pot.
  • Diced the vegetables and add into the pot.
  • Bring the stock to a boil, add the garlic and herbs into stock and reduce heat to a simmer. Place a lid on the pot.
  • Let simmer for a minimum of 1 hour and no longer than 3 hours, stirring every 10 to 15 minutes.
  • Remember to check the stock levels as it will evaporate off, replace as necessary.
  • 5 minutes prior to completing the cooking process chop the egg noodles and place into the pot.
  • Turn the heat up to induce a boil.
  • Serve immeaditely, grind salt and pepper over each bowl to taste.


Serve with:
Fresh crusty bread and butter.


Variation:
To add some kick to this Chicken Noodle Soup recipe sprinkle dried chilli flakes over each bowl just prior to serving.


Note:
# 1 - The amount of stock used will depend on the cooking time, the longer the cooking time the more tender the chicken. When the chicken starts to break apart it's perfect.
# 2 - You can substitute just about any vegetables and herbs you like with this recipe, within reason. If you think a different vegetable or herb will taste good, it probably will.
# 3 - If using a store bought stock it will likely have a high salt content so careful with salt
# 4 - For best result allow the chicken to cook for an hour before adding the vegetable for another hour, this will help to make the chicken more tender and make this the best Chicken Noodle Soup recipe anyone has ever tasted.

Easy Cooking Cabbage Soup Recipe

Soups are a great source of vitamins without being a heavy meal ie low in fat and carbs, this easy-cooking-for-men Cabbage Soup recipe is based on the famous Cabbage Soup diet where this recipe claims people can loose 10 pound (or 5 kilos) in a week.
The other great thing about soup are they are usually a cheap meal, are a real treat to warm you up in winter, and although cooking time is a little on the high side the preperation time is low.






Ingredients:
  • 8 cups of water (can be substitited for chicken or vegetable stock)
  • cabbage leaves
  • 2 medium sized carrots
  • 1 brown onion
  • 1 green capsicum
  • 1 tomato
  • 2 celery stalks
  • 1/2 teaspoon thyme
  • salt and pepper
  • chilli flakes (optional)
  • 1 tomato (optional)
  • 1 chicken breast diced (optional)


Method:
  • Add water to a large pot and turn on medium heat.
  • Cut all vegetables and place them in the warm pot with brief stirring.
  • Add the thyme.
  • Turn on the high heat and let it boil for 5 minutes with constant stirring.
  • Turn down to low heat, cover and let it simmer for 30 to 45 min.
  • Scoop into a bowl and serve with freshly cracked salt and pepper.
  • To add a little kick to your cabbage soup recipe try a sprinkle of dried chilli flakes on top just prior to serving.


Variation:
For a finer cabbage soup recipe add another tomato and 1 teaspoon of minced garlic into the mix prior to boiling. After boiling pour all ingredients into a blender and blend until desired cabbage soup consistency is achieved.

Easy Cooking Banana Pancakes Recipe

A hearty breakfast of easy-cooking-for-men Banana Pancakes recipe is a low GI start to the day to get your body moving and keep it powered until lunch.






Ingredients:

  • Reduced fat butter for frying


  • 2 ripe medium bananas, peeled and mashed


  • 3 tbs brown sugar


  • 1 1/2 cups self-raising flour


  • 1 1/2 cups reduced-fat milk


  • 2 eggs, lightly whisked



Method:

  • To make the pancake batter, sift the flour into a medium bowl and make a well in the centre.


  • Whisk together the milk, egg and sugar in a jug.


  • Gradually add the milk mixture to the flour, whisking constantly, until batter is smooth and combined.


  • Add the mashed banana to the batter and stir until combined.


  • Brush a large non-stick frying pan with a scoop of butter and heat over medium-high heat.


  • Pour some of the banana pancake recipe batter into the pan.


  • Cook until bubbles appear through the pancakes.


  • Carefully turn the banana pancakes and cook for a further 1 minute or until golden brown and cooked through.


  • Transfer the banana pancakes to a heatproof plate and cover loosely with foil. Place in preheated oven to keep warm. Repeat, with the remaining batter, greasing and reheating pan between batches.



Variation:
# 1 - Serve with whipped cream, raspberries, blueberrys and diced banana.
# 2 – Macadamian nut pancakes are a crunchy alternative. Simply finely dice (nearly shaved) the macadamia nuts and mix into the batter prior to cooking.


Warning, kids love this banana pancakes recipe but you don't want them to cover the banana pancakes with golden or maple syrup. These syrups are fully of sugar, are fattening and just plain un-healthy.A breakfast of this banana pancakes recipe when served with fresh fruit (think berries) and cream will be plenty sweet enough, the fruit is even good for your kids, especially if you can't get your kids eating fruit at other times.

Easy Cooking Bruschetta Recipe

This easy-cooking-for-men bruschetta recipe is very versatile, it can be served as either a main dish or as a entree. The tomato mix can also be used as a garnish on other dishes, particularly with fish. This recipe should take about 10 to 15 minutes.




Ingredients:

  • 6 large fresh tomatoes (the freshest and ripest you can find will make the best bruschetta recipe)
  • 1 red onion
  • Splash of extra virgin olive oil (highest quality you can find)
  • 1 small handful of basil leaves (fresh from your garden is best)
  • Your favourite garlic bread
  • Boccancini
  • 1 large lemon
  • Salt
Method:
  • Squeeze the lemon into a medium size bowl (cereal or soup bowl is fine). Remove all lemon seeds.
  • Pour the oil in with the lemon juice, the amount of oil should be about 3 times the amount of lemon juice.
  • Wisk the lemon and oil until well mixed, looks slightly milky. Dice the basil leaves and throw in with the lemon and oil.
  • Finely dice the onion as fine as you can. Place the onions into the lemon oil mixture. The time spent in the lemon oil mixture will remove the bite of the onion and provide the bruschetta with a more subtle refreshing flavour.
  • Place the garlic bread onto an oven tray, buttered side up.
  • Slice the boccancini and place over the uncooked garlic bread slices.
  • Place the garlic bread in an oven or grill and cook to your liking, (cooking the same as your normal standard for the garlic bread you are using). Note. Don't let the boccancini burn, it will start to turn a light brown colour around the edges.
  • While the garlic bread is cooking, half the tomatoes, with a spoon scoop out the seeds. Throw away the seeds.
  • Chop the tomatoes.
  • Combine the onions and tomatoes in a large mixing bowl just prior to placing onto the garlic bread. Gently mix the tomato onions and oil to cover all the tomatoes.
  • Remove the bread from the oven and scoop on the tomato mixture.
  • Serve immeaditely which a crack of fresh sea salt.

Served with a light fruity white wine, this bruschetta recipe is well served as a refreshing entree, or is substantial and satisfying enough to be served as a meal by itself.

Easy Cooking Vegetable Samosa Recipe

The kids will love these as a treat, and the boys will think that this easy-cooking-for-men Vegetable Samosa recipe is their new favourite snack best served with a few cold beers. A tasty meal stuffed full of vitamins and vegetables.




Ingredients:
  • Frying oil
  • 1 brown onion, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp turmeric
  • 1/4 tsp chilli powder
  • 3 large potato, boiled and diced
  • 1/2 cup frozen peas, thawed
  • 1/2 cup frozen corn, thawed
  • 1 tbs chopped fresh coriander
  • 1 tsp fresh lemon juice (or lime juice)
  • 3 (25 x 25cm) sheets puff pastry, thawed
  • Tzatziki dip, to serve

Method:
  • Heat 1 tbs of the oil in a frying pan over a medium heat.
  • Add the onion and cook for approx 5 minutes, look for the onion to start to turn translucent.
  • Add the cumin, coriander, turmeric and chilli and cook for 30 seconds, making sure the onions are well coated in the spice mixture.
  • Add the potatoes, peas, corn, coriander and lemon juice and stir. Cook for 2 minutes.
  • Set aside to cool.
  • Cut out 4 circles from each sheet of pastry. Working with one circle at a time, roll to make a cone shape.
  • Place 2 tbs of the mixture into the centre and fold the top of the pastry over and pinch to close to get the vegetable samosa shape.
  • Repeat with remaining pastry and filling.
  • To shallow fry the vegetable samosas pour oil into a saucepan and heat the oil up to 180°C, (medium high).
  • In batches, cook the vegetable samosas for 2 minutes on each side, or until puffed and golden brown.
  • Drain well on paper towels.
  • Serve with tzatziki dip.

Variation:
#1 - Substitute 2 potatoes and half of the peas and corn for some lean lamb mince. Add the mince at the same stage as the other vegetables and cook for approx 20 minutes, or until well browned.
#2 – For a slightly different texture to this vegetable samosa recipe substitute the puff pastry for filo pastry, don't forget to seal the filo pastry and brush the outside with beaten egg wash.

Easy Cooking Pumpkin Soup Recipe

This easy cooking for men pumpkin soup recipe is not only very simple and healthy but is probably the cheapest main course meal you could ever serve up at the dinner table.




Ingredients:
  • Half Pumpkin
  • 4 large potatoes
  • 1 brown or white onion
  • tablespoon minced garlic
  • mixed herbs
  • 3 litres of water (vegetable stock optional)
  • ground rock salt and cracked pepper
  • Handful of parsley

Method:
  • Pour the water into a large pot and boil. While the water is boiling cut the skin off the pumpkin and cut into pieces, large or small it doesn't matter.
  • Peel the potatoes and cut into pieces.
  • Peel the onion and dice finely.
  • Once the water starts to boil add the pumpkin, potatoes, onion, garlic, and mixed herbs.
  • Put a lid on the pot and turn the heat down to a point where the water is just able to remain boiling for 30 minutes.
  • Monitor that the water does not evapourate off.
  • Test that the pumpkin abd potatoes are soft by prodding with a butter knife. If the knife goes through easy the the soup is cooked.
  • Remove the pot from the stove, drain off any excess water into another pot or bowl. Mash with a masher or beat with a hand held beater into the desired consistency.
  • If you like the soup thin and runny you can add more of the water back in and mix well. I prefer a very thich pumpkin soup recipe that is roughly mashed, ie still just able to see small bits of potato.
  • Scoop into a bowl and serve. Note, warn your diners that soups are very hot, i have burned my mouth on this one more times than i can remember.
  • Garnish the top of each bowl with a small picking or parsley.
  • Crack rock salt and pepper over the top of each bowl to taste. Note, if using vegetable stock instead of water be aware that stock usually contains high amounts of salt and that additional salt should not be required.

Variation:
Substitute the water for vegetable stock, or part there of.

Serve with:
Serve your easy cooking pumpkin soup recipe with fresh crusty bread and butter.
If the soup is thick (as per my ideal above) then you can easily scoop the soup onto the bread.
