Hamburger Patty Recipe - Easy Cooking

Another easy cooking recipe for the barbecue is this hamburger patty recipe. Like most guys i love to grab a beer and cook outside on the barbecue, and just start frying. There is no more easy method of cooking for guys than to crank up the barbecue, and who doesn't love that smoky flavour in your hamburger patties. This recipe uses half lamb with half beef, but you can just as easy use all beef.



Ingredients:
  • 250 grams beef mince - For best results make sure the lamb and beef are as fat free as possible, too fatty and you will lose flavour and burn the outside of the patties. You also risk a flare up on the barbecue.
  • 250 grams lamb mince
  • 1 medium sized carrot
  • 2 brown onions
  • 2 beef stock cubes
  • 2 tablespoons barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tea spoon mince garlic
  • 2 eggs
  • mixed herbs
  • 2 tablespoons butter

Method:
  • Finely dice one of the onions and grate the carrot.
  • Beat the eggs, and crumble the stock cubes.
  • Mix all the ingredients (except the second onion and butter) together thoroughly.
  • Halve the second onion and slice, this will be used as a topping in the bun later.
  • You can either roll handfulls of the mixture into patties and use and egg ring  or a hamburger patty maker if you are really fussy about presentation.
  • Note, if the hamburger patty mixture is too sloppy you can always add a little plain flour to help.
  • Get the barbecue plate hot. Drizzle a little oil and fry until cooked through, check regularly so that they don't get burnt on one side. Many barbecues have hot spots so make sure you move the patties around a little so they all cook evenly.
  • Place the sliced onion rings on the barbecue and drop the 2 tablespoons of butter on the top. Flip regularly to avoid burning the onions. Allow the butter to coat through the onions, this will create a caramelised effect and stop the onions from drying out.

Serving:
Note I didn't include the serving ingredients in the above as this is strictly a hamburger patty recipe, but i guess hamburger patties by themselves aren't much fun.

Bun selection is important and varies from person to person. I like a large soft bun with seseame seeds, OK stop laughing now.

Spread a relish (i like tomato) over the bottom half of the bun, and mayonaise over the top half.
Place the hamburger patty on the bottom bun, and top with a few of the caramelised onion rings. If you like sauce add it now, mustard, berbecue or ketchup are all good. Add sliced tomato, salt and pepper, jalapenos, avacado, maybe some cheese, and finally lettuce.

Close the hamburger with the top half of the bun, serve with a side of chips. You guys can grab another beer for a job well done, and chow down on the tastiest hamburger patty recipe you likely to eat today.

Variations:
Fry a few eggs and rashers of bacon for a hamburger with the lot.

Easy Cooking Thai Fish Cakes Recipe

Another favourite of easy cooking for men this Thai Fish Cakes Recipe is simple to cook and quick and easy to prepare.




Ingredients:
  • A few of your favourite fillets of white fish
  • 1 free range egg
  • 3 tablespoons of cornflour
  • 1 tablespoon of fish sauce
  • 3 teaspoons of red curry paste
  • handful of fresh corriander leaves
  • 2 thai chillis
  • handful of green beans
  • handful of spring onions
  • Peanut oil
  • Sweet chilli sauce
Method:
  • Place the fish into a food processor and mix into a mash
  • Beat the egg and add into the food processor with the cornflour, fish sauce, curry paste, chilli, and corriander. Mix in the food processor until well combined.
  •  Remove the mixture from the food processor and place into a bowl. Slice the beans and spring onions and add into the fish cake mixture, mix well.
  • Scoop a dollop of fish cake mixture into an egg ring. Tip, wet a spoon or eg slice to press the fish cake mixture well into the egg slice. Oil the inside of the egg slice.
  • Heat the peanut oil in a large heavy base frying pan. Pour in only enough oil to cover the base of the fry pan. This is a shallow fry recipe.
  • Fry the Thai Fish Cakes and flip when golden brown. Once both sides are cooked to a golden brown, remove from the pan and drain the Thai Fish Cakes on paper towels. Place on a tray in a low heat oven while cooking the other fish cakes.
  • Serve on a bed of rice and a dollop of sweet chilli sauce on top and some asian greens on the side.

Variation:
Substitute the rice and mix up your Thai Fish Cakes Recipe by serving on a bed of mashed potato mixed with mixed herbs, cream, and butter.

Easy Cooking Stuffed Mushrooms with Sausage

This easy cooking for men Stuffed Mushrooms with Sausage recipe is another favourite of mine and is very easy to prepare and make. Stuffed full of vegetables its great for the kids and if you remove the sausage its a great vegetarian meal full of protein.




Ingredients:
  • Large mushrooms (usually about 2 per person)
  • Sausage (your favourite sausage - i usually use a Spanish Chorizo, but you could use Italian Sausage, Peperoni, Proscuito, any other spiced meats, or if not readily available you can even use bacon).
  • Green Capsicum
  • Brown Onion
  • Soft cheese (I use Bocancini because i usually have it available and use it regularly in my Easy Cooking Bruschetta Recipe)
  • Grated mozzarella or pizza cheese
  • Lemon
  • Potato
  • Salsa mix (premade dip is easy)
  • Mixed herbs
  • Salt and pepper to taste (optional)
  • Sour creame or Guacamole (or both)

Method:
  • Peel and boil the potatoes.
  • Diced the sausage and onion and fry in a medium heat pan. Cut the lemon and squeeze over the pan once cooked.
  • Dice the Capsicum.
  • Snap the stems off the mushrooms. Add a tea spoon of Salsa to the inside base of the mushrooms. Dice the stems of the mushrooms.
  • Once the potato is cooked, put the potato, sausage and onion, bocancini, capsicum, mushroom stems, and mixed herbs into a bowl and mix together.
  • Place the mushroom caps onto an oven tray. Scoop the mixture into the mushroom caps. Sprinkle the mushrooms with grated cheese.
  • Put the Stuffed Mushrooms with Sausage into a preheated oven (preheated to 180 degrees celcius) and cook until the grated cheese is melted.
  • Grind with salt and pepper to taste (note i usually don't but i notice that most people do)
  • Serve with a dolop of sour creame or a Guacomole.

Variation:
As always a little spice can have a big impact, and this Stuffed Mushrooms with Sausage recipe is no exception. I will use either or two variations of this recipe.
#1. Sprinkle with dried chilli flakes after removing the Stuffed Mushrooms with Sausage from the oven.
#2. Add a small amount of curry powder into the stuffed mixture prior to mixing and putting into the mushroom caps.

This Stuffed Mushrooms with Sausage recipe is versatile enough to be used as either a main meal, side dish or entree.

Easy Cooking Omlette Recipe

Here is another egg based easy cooking for men recipe that an self respecting man should be able to whip together for an impromptu brunch or a breakfast for that special someone, its an omlette recipe. Use your imagination for ingredients on this recipe, you can almost think of an omlette like a pizza (make that vegetarian pizza).




Ingredients:
  • 2 free-range eggs
  • Salt & pepper, to taste
  • 1 scoop of butter
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • Soft cheese of your choice (use anywhere from Camembert to my favourite Boccancinni)
  • 1 teaspoon Minced garlic
  • Fresh mushrooms
  • Capsicum
  • Spring onion
  • Chorizo sausage (optional)
  • Tabasco sauce (if you like a bit of a kick)

Method:
  • The eggs must be free-range. When ever eggs are the main ingredient don't even think about battery hen eggs. The flavour in free-range is so much better.
  • Use a large pan with a heavy base that can be placed in the oven.
  • Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
  • Omelette's cook quickly so you should prepare the ingredients first.
  • Slice the vegetables into the desired size. I prefer cut smaller for a breakfast / brunch type meal. Slice the cheese into thin(ish) slices.
  • Crack the eggs and add the garlic and beat the eggs lightly. It is important to use an egg whisk when beating as you want to get a lot of air into the mixture. Whisk until light and frothy.
  • Turn on the stove and start to heat the pan. Scoop in the butter.
  • Wait for the butter to melt, and the pan is hot and the butter sizzling.
  • Pour in the egg, cook until the base starts to set, less than 30 seconds, and then sprinkle the vegetables on top (except the parsley). Not the top should still be runny. Cook for another 30 seconds and remove from the heat.
  • Add the sliced cheese on top and place the pan into the oven.
  • Cook until the cheese starts to brown, remove pan from from the oven, remove omlette from the pan and place onto a plate, grind rock salt and pepper over the top, sprinkle the parsley on top, and serve with a fresh glass of orange juice immediately.

Variation:
  • Add chorizo or Italian sausage onto the omlette at the same time as the vegetables
  • Serve with a splash of Tabasco sauce for an extra kick.

Easy Cooking Stuffed Chicken Breast Recipe

This easy-cooking-for-men stuffed chicken breast recipe can be used as a main meal served with salad or vegetable, or the rolled chicken breast can be cooled and sliced to serve as finger food.




Ingredients:
  • 2 chicken breast
  • 12 prawns
  • 4 slices proscuitto (thick cut)
  • minced garlic
  • 2 slices white bread
  • 1 large egg
  • mixed herbs
  • 1 lemon

Method:
  • Make a stuffing by placing the bread, cracked egg, prawns, garlic, and mixed herbs into a food processor. Blend well.
  • Slice (butterfly) the thawed chicken breasts to double their size when spread out.
  • Use a rolling pin or mallet to compress the chicken and spread it out further. Be careful not to “bash” holes in the meat. Lay both the chicken breast together and place the stuffing mix on top.
  • Roll the chicken breast around the stuffing.
  • Roll the proscuitto around the outside of the stuffed chicken breast to help keep it together.
  • Place into a medium heat oven for 1 ½ hours. Be careful not to let the chicken dry out, monitor carefully.

Note: Do not add extra salt, the proscuitto is already very salty from its curing process.

Variation:
# 1 - Add you favoutite soft cheese such as a camembert or boccancinni into the stuffing, best when served warm.
# 2 - If the meat has dried out too much in the oven a creamy garlic and onion sauce will help when drizzled over the top of the sliced pieces.

Serve the stuffed chicken breast warm with a squeeze of lemon juice over the top, or leave to cool and slice (10mm or ½ inch) for nibble food.
